My ramen eggs turned out great!
I sous vide’d them at 194 F for about 8 minutes, took 'em out, and dunked them in cold water(very important to let them cool). Mixed up about a half cup of each sake, mirin, and soy sauce, a big heap of grated ginger and garlic brought to a simmer and put in 2 cups water. Put the eggs in the marinade and let them cure for 2 days. They were perfect by my estimation. A firm and set white with an ooey gooey yolky center.
