i love cooks that care this much about their food. i’m working at a place right now where pretty much all the cooks hate the food except the owner, who does not take criticism.

Same. A chef that cares tells me all I need to know. I befriended some chefs and so instead of telling them what I wanted I would just ask them was best that day. I tried a lot of new things. Really broadened my horizons that way.

There’s a restaurant that my friends and I frequent that has no fixed menu, makes everything from scratch, does their own fermenting, pickling, grain milling, etc. Amazing food, always fresh and in-season, often locally sourced, but also the chefs are insane and do the most unexpected combinations and preparations.

We’ve been there enough times that they know what we like, so we just show up, ask for whatever’s good this week, and they serve us the best meal we’ve ever had literally every time. It’s the absolute peak dining experience and I am so grateful for it. Anyone who says there won’t be restaurants in a communist utopia needs to stop going to Buffalo Wild Wings and realize that there are people who are deeply dedicated to the craft of cuisine and hospitality for its own sake, and commodification of food is actually holding those people back.

The most important factor is when there is clearly shady business going on, like they only take cash or something. That’s how you know you’re in for an amazing meal

I’ve got a place like this near me. Sells cheap as heck pizza, loaded up with twice as much of everything (including cheese) you’d normally expect. Doner stuffed to bursting, and a mountain of free fries with everything. They also have a wall of liquor for sale with no prices on it, and the guy at the counter just says, “You want something? I tell you the price.”

There’s definitely some money laundering going on here, but my kids don’t care. Cheap pizza, and booze sold by a dude with highly questionable ethics? Teenager paradise.

Literally just do what every other noodle restaurant does and pack them separately: a box of noodles (+ meat/veg) and a cup of broth.
