Another easy one you can pull out when you need to impress people are black bean sweet potato tacos. I don’t usually use a recipe, but this one seems good enough:

You can do basically whatever you want for a dip or sauce. Avocado, guacamole, salsa, all good. Sometimes I’ll make a lime crema to go with it
