MSG is good and gets too much of a bad rap for being bad for you because of xenophobes. That’s it, that’s the post.

GOOD post.

No seriously MSG occurs naturally in a lot of stuff, like mushrooms. You’re not going to get cancer or anything for putting a bit of it in your fried rice or anything. It’s probably less harmful than salt. MSG is good folks.

… I thought it was a salt?

Kinda wondered if that was why it gives me headaches. Its the same thing that happens when I gorge on salted popcorn or eat a bag of salted potato chips in one sitting.

It is. It’s the sodium in the MSG that gives that effect of dehydrating you.

MSG is so good it almost feels like cheating adding it to food. Like I picked the “easy mode” in the game of cooking and I’m just a filthy casual

I was just joking about scary chemical names. Glutamate is an amino acid which are molecules that combine to form proteins in our cells. Because amino acids are good for us our tongue tells us it tastes yummy. Sodium also tastes good to us which makes monosodium glutamate delicious.

You ever have a delicious mushroom or aged cheese? Glutamates make them taste that way.
