A couple suggestions if you ever revise this. So glad to see Girl who Leapt Through Time though, it’s a great one!

No SHAFT anime? Obviously there’s fanservice in all their shows so perhaps it’s not for beginners, but their animation is some of the most creative in the industry. The use of cut-out/collage/ cuts and title cards . are beyond any other studio. While obviously there’s totally horny shit from them like Maria+Holic, Madoka is pretty accessible. Zetsubou Sensei is amazing once you have a handle on anime and its tropes, Hidamari Sketch remains comfy and winning slice of life, and the Monogatari stories are all really good too.

While perhaps multiple Gainax shows is excessive, I really just love Gunbuster. It’s so good, Noriko is an incredible protagonist, and the ending is absolutely earned and good. 6 episodes, 12 if you include Diebuster. 10/10 and better than Gurren Lagann (though that show rocks hard too!)
Yo Helck is coming out with a show? I hope they do it justice.
Also watch ACCA-13. Probably enjoy Moribito, Space Dandy, cells at work, 91 days, samurai Champloo, Sound of the Sky, hellsing ultimate, pop team epic, spice and wolf, and death parade.
Roujin Z is a fantastic anime movie. It’s written by the guy who wrote Akira and Satoshi Kon did the key animation, planning, and layout. The story is fun and the animation is unmatched.
